These pumpkin waffles are the most delicious way to welcome in the pumpkin season! They’ve got a whole lot of pumpkin puree and that wholesome pumpkin-spice flavour for the coziest breakfast ever. Top these with some whipped cream and descend into brekkie heaven!
You’ve heard of Pumpkin Pie. You’ve heard of the Pumpkin Spice Latte. Now, meet Pumpkin Waffles! If you’re looking for pumpkin recipes to make the most of the holidays – I’ve got you covered.
This has been our go-to breakfast this pumpkin season – and an especially big hit with my 11-month-old. It’s essentially a traditional waffle batter that’s been spiced with some ground cinnamon, garam masala (almost like pumpkin spice), ground ginger, and of course, heaps of pumpkin puree!
You can prep the batter ahead to use for busy mornings, and even make Pumpkin Pancakes using it. Whatever it is, this recipe always finds its way into our meal plans come December and has got to be on yours!
Ingredients You'll Need
Egg – You could sub with a flax egg but I haven’t tried that out Sugar – I use granulated sugar herePumpkin Puree – Both fresh or canned work. To make fresh pumpkin puree, the steps are outlined in the recipe card belowMilk –Whole milk, can be subbed with plant milkVanilla Extract – Don’t skip this!All-Purpose Flour (Maida) – You can use gluten-free flour instead to make these gluten-freeBaking Powder – I use aluminium-free baking powder from Urban PlatterButter – to add moisture and for brushing Spices – Garam Masala (or Pumpkin Spice Powder), Cinnamon, Ground Dry Ginger
How to make Pumpkin Spice Waffles
Add eggs, pumpkin puree, milk, vanilla extract and spices to a bowl and whisk.Add flour, baking powder, sugar and melted butter and mix againThe batter will be lumpy but don't overmix and try to make it smoothTo start making pumpkin waffles, preheat the waffle iron and brush it with butter
5. Pour ¼ cup batter in the center of the waffle plate
6. Cook for approx 4 minutes till the waffles are crisp and golden brown
Serving Ideas
Top these off with some maple syrup, a little bit of whipped cream, and some toasted pecans to get that Pumpkin Pie feel! Or you can top this with some butter and honey (trust me on this combination!)
Serve with fresh fruit – persimmon is in season and it pairs perfectly with these! You can also skip the maple syrup and honey and instead top this with some stewed apples and yogurt to make this even more cozy and comforting.

Instructions
Preheat your waffle iron. Mine is preheated when the light goes off.
Whisk together pumpkin puree, milk, vanilla, egg, garam masala, cinnamon, ginger and salt and whisk well.
Add sugar, flour, baking powder and butter and mix until just combined. The batter will look a little lumpy.
Brush the waffle iron with butter on both sides. Pour ¼ cup batter on the preheated waffle iron in the middle of the waffle plate and close the lid. Cook the waffles until golden and crisp for approx 2-3 minutes on each side (this will vary a little with each waffle iron).
Repeat with the remaining batter. Serve hot with butter and honey or maple syrup.

Notes
It's important that the waffle iron is preheated before you pour the batter to get that crispy exterior. You should hear a sizzle when you brush the waffle plates.
As long as you see steam coming out of the waffle iron, the waffles are cooking. When it slows down, it might be time to check on your waffles.
Homemade Pumpkin Puree Recipe: Peel and slice or cube pumpkin. Steam it till the pumpkin is fork tender. Grind it to a smooth paste in a food processor or mixer grinder.
