This has been our go-to breakfast this pumpkin season – and an especially big hit with my 11-month-old. It’s essentially a traditional waffle batter that’s been spiced with some ground cinnamon, garam masala (almost like pumpkin spice), ground ginger, and of course, heaps of pumpkin puree!
You can prep the batter ahead to use for busy mornings, and even make Pumpkin Pancakes using it. Whatever it is, this recipe always finds its way into our meal plans come December and has got to be on yours!

Serving Ideas
Top these off with some maple syrup, a little bit of whipped cream, and some toasted pecans to get that Pumpkin Pie feel! Or you can top this with some butter and honey (trust me on this combination!) Serve with fresh fruit – persimmon is in season and it pairs perfectly with these! You can also skip the maple syrup and honey and instead top this with some stewed apples and yogurt to make this even more cozy and comforting. There’s nothing like cozying up with your family during this time of the year, with some pumpkin waffles of course
