My current sausage obsession is Oven Roasted Potatoes & Sausage. This recipe checks all the boxes. It’s a one-pan meal that only requires a few minutes of prep work. For how effortlessly it comes together, it sure packs flavor. There are only a few ingredients, and the ones listed can easily be swapped out with your favorites.

Spread the coated mixture in an even layer on a large baking sheet. Bake at 425°F for 20 minutes. Remove the pan from the oven and stir the contents so that everything roasts on every side. Push the potatoes to one side and add the sausage and broccoli to the pan. Return the pan to the oven and bake for another 25 minutes until everything is cooked through and fork tender.Recipe Tips

Ingredients
3 large red potatoes, chopped 1 large onion, roughly chopped 1 large red bell pepper, chopped 3 Tablespoons olive oil, divided 2 teaspoon garlic powder 2 teaspoon dried rosemary 1 teaspoon salt 1/2 teaspoon black pepper 1 pound smoked kielbasa or your favorite sausage, sliced 1 head of broccoli, choppedInstructions
Preheat oven to 425º F.Place potatoes, onion and bell pepper in a bowl. Add olive oil, salt, pepper, garlic powder, and rosemary. Toss until everything is evenly coated. Place potatoes on a large baking sheet. Bake for 20 minutes. Meanwhile toss the broccoli with the remaining olive oil and season with salt and pepper.Remove the baking tray from oven, and stir the vegetables so all the sides can get browned. Push the potato mixture to the side and add the sliced sausage and broccoliReturn to the oven and cook for 25 minutes, or until everything is cooked through.
