I can’t get enough of easy sausage recipes. They’re bursting with flavor and endlessly versatile. I always return to Creamy Sausage & Artichoke Pasta or pair simple Air Fryer Sausage with whatever veggies I have lying around.

My current sausage obsession is Oven Roasted Potatoes & Sausage. This recipe checks all the boxes. It’s a one-pan meal that only requires a few minutes of prep work. For how effortlessly it comes together, it sure packs flavor. There are only a few ingredients, and the ones listed can easily be swapped out with your favorites. 

Once you taste this recipe and realize how unbelievably easy it is, there’s no doubt it’ll join the weeknight recipe rotation.

This recipe is so easy to customize. You can swap out the varieties of potato, onion, peppers, and sausage to create a meal full of your favorite flavors.  Bulk up the recipe by adding extra veggies you have on hand.  Prep takes only 10 minutes. This recipe is mostly hands-off, so you can toss dinner in the oven and return to it later. Sheet pan meals make cleanup effortless so you can spend more time with your family and less time at the sink

What You’ll Need

Red Potatoes – These are perfect for this recipe because you don’t have to peel them, and they land in the sweet spot between tender and firm. They won’t turn to mush on the pan but will still have pillowy soft centers. Onion – Any onion will work. Red, yellow, white, and sweet are all delicious in this recipe. Bell Pepper – I like to use red bell peppers since they’re sweeter than green and yellow ones, but use whatever you have. Broccoli – you really can use any vegetables that you like Olive Oil Salt & Pepper Garlic Powder Rosemary – Rosemary compliments all kinds of sausage and takes this recipe from good to irresistible. Sausage – Use your favorite sausage, just remember to remove the casings. I’ve used Italian Chicken Sausage here, but this recipe is scrumptious with any kind.

How To Make Oven Roasted Potatoes & Sausage

Chop all of your produce into bite-size pieces. Add all the potatoes, onion and bell peppers to a bowl and toss to coat with olive oil and all the seasonings.  Spread the coated mixture in an even layer on a large baking sheet. Bake at 425°F for 20 minutes. Remove the pan from the oven and stir the contents so that everything roasts on every side. Push the potatoes to one side and add the sausage and broccoli to the pan. Return the pan to the oven and bake for another 25 minutes until everything is cooked through and fork tender.

Recipe Tips

Once you remove the pan from the oven after everything’s cooked through, serve immediately. Since everything is in small pieces, it’s quick to cool down.  The smaller you chop the ingredients, the quicker they’ll cook. So if you want to trim down the cooking time, make the pieces smaller than bite-size. Try different seasoning combinations to keep this recipe fresh from week to week. For example, try homemade Pork Seasoning or Taco Seasoning.

What other vegetables can I add to this recipe?

For a winter meal, try potatoes, butternut squash, and brussels sprouts. In the summertime, add tomatoes, asparagus, and artichokes. The possibilities are endless with this versatile recipe. It’s a perfect way use up whatever you have in your fridge at the end of the week.

Are there other ways to bulk up this recipe?

This recipe isn’t just for dinner. Turn it into a breakfast or brunch using breakfast sausage. Then, fry some eggs and top the whole thing with Hollandaise. But even when it is dinnertime, adding a couple of fried eggs to each serving is a great way to bulk up the meal. Place a plate of warm tortillas and a bowl of shredded cheese on the table, and everyone can make their own sausage and potato tacos.

Storage

The best way to store leftover Oven Roasted Potatoes & Sausage is to transfer them to an airtight container. It’ll keep in the fridge for 2-3 days. After that, you can air-fry, rebake, or microwave the leftovers to reheat them.

Oven Roasted Potatoes and Sausage - Crispy oven roasted potatoes, peppers and onions, with your favorite sausage. Great one pan meal for any night of the week.

Cook Time 45 minutes
Total Time 55 minutes

Ingredients

3 large red potatoes, chopped 1 large onion, roughly chopped 1 large red bell pepper, chopped 3 Tablespoons olive oil, divided 2 teaspoon garlic powder 2 teaspoon dried rosemary 1 teaspoon salt 1/2 teaspoon black pepper 1 pound smoked kielbasa or your favorite sausage, sliced 1 head of broccoli, chopped

Instructions

Preheat oven to 425º F.Place potatoes, onion and bell pepper in a bowl. Add olive oil, salt, pepper, garlic powder, and rosemary. Toss until everything is evenly coated. Place potatoes on a large baking sheet. Bake for 20 minutes. Meanwhile toss the broccoli with the remaining olive oil and season with salt and pepper.Remove the baking tray from oven, and stir the vegetables so all the sides can get browned. Push the potato mixture to the side and add the sliced sausage and broccoliReturn to the oven and cook for 25 minutes, or until everything is cooked through. Remove from the oven and serve immediately.

Notes

Mix in whatever veggies you like - broccoli, Brussel sprouts, asparagus, mushrooms, artichoke hearts etc.
