It’s tailgate time again! These are days full of football, parking lot parties, and entertaining guests at home and away. Everyone in our family always looks forward to football season, but if I’m being completely honest, it’s still too hot to party outside! Many of our days are still well over 100° here in Phoenix, so we beat the heat with lots of shaded awnings, misting fans and icey, cool drinks.
The one place we don’t skip out on the heat, is in our food! Arizona has always been known for its heat, not only with the sun, but also with its spicy Southwest fare. Some type of Chile or hot sauce always seems to find its way into almost everything we eat, and THAT’S why I always have a big selection of El Yucateco hot sauces in my house! Today, I used TWO of their new flavors in a brand-new Tailgate Teriyaki and Spicy Pineapple Wings recipe, and these babies DID NOT disappoint! El Yucateco’s Grilled Pineapple & Habanero Hot Sauce went into the base marinade of my wing recipe for some sweet heat, and the Black Marisquera Hot Sauce went into my finishing teriyaki glaze for a ton of depth and amazing umami flavor!
I started out my marinade in a sealable plastic bag with some chopped scallions, a bit of garlic paste and ginger paste, and then about half a bottle of that El Yucateco Grilled Pineapple & Habanero Hot Sauce. This sauce is the mildest in their lineup of flavors, but do not let it fool you…it still has just the right amount of KICK! I finished my marinade with a cup of chopped, fresh pineapple, some salt and pepper, then added my wings and massaged it all together.
I let that rest in the refrigerator for a couple of hours and then grilled them up on my pellet smoker for just about 10 minutes on each side.
While those were grilling, I made the BEST home-made teriyaki sauce, with about half a bottle of El Yucateco, but this time with the Black Marisquera hot sauce flavor!
Even though the Marisquera sauces say “seafood” on the label, you’ll find that they are SUPER versatile, and can be used on ANY food that needs depth and deliciousness! I added lots of butter, brown sugar, soy sauce, and more of that garlic and ginger paste, heated it all up and let it reduce to a thick, sweet, spicy and savory teriyaki. THIS will be my new “go-to” teriyaki glaze!
I tossed everything together with those wings and finished them with some gorgeous, fresh, chopped chives. These wings were so amazingly sweet, savory, spicy and juicy! There’s NO beating the heat from the sun here in Phoenix, but we sure can win with the flavorful heat of El Yucateco’s sauces! Tailgate Teriyaki and Spicy Pineapple Wings
Ingredients:
2 lbs. chicken wing sections 2 oz. El Yucateco Grilled Pineapple & Habanero Hot Sauce 2 oz. El Yucateco Black Marisquera Hot Sauce 2 tbsp. garlic paste 2 tbsp. ginger paste 3 scallions, chopped 1 cup fresh pineapple, chopped 4 tbsp. butter 1/2 cup brown sugar 1/2 cup soy sauce 1 tsp. each salt/pepper 2 tbsp. fresh chives, finely choppedSteps:
In a large, sealable plastic bag, add the chicken wings, El Yucateco Grilled Pineapple & Habanero Hot Sauce, 1 tbsp. each garlic and ginger paste, scallions, fresh pineapple, salt and pepper. Seal the bag and massage until all ingredients are combined and all the wings are coated. Refrigerate for 2 hours. Heat your grill or pellet smoker to 425 degrees. Add the wings and cook for about 10 minutes on each side, or until wings reach 165 degrees internally. In a medium saucepan, combine the El Yucateco Black Marisquera Hot Sauce, butter, brown sugar, 1 tbsp. each garlic and ginger paste and soy sauce. Whisk to combine and simmer on medium heat until the sauce reduces enough to coat the back of a spoon (about 10 minutes). Place the grilled wings into a large mixing bowl and toss in the teriyaki sauce. Transfer to a large serving dish and finish with the finely chopped chives. Serve immediately.
