Naan khatai is very popular sweet biscuit that originated in the subcontinent. It is typically made with flour, chickpea flour, ghee, sugar, and cardamom powder.

Ingredients:

1 1/2 cups all-purpose flour 1/2 cup chickpea flour (besan) 1/4 cup semolina (sooji) or if you don’t like semolina you can try without it as well 1 cup powdered sugar 1 cup melted ghee (clarified butter) 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp cardamom powder 1 egg yolk, beaten

Instructions:

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the all-purpose flour, chickpea flour, semolina, powdered sugar, baking powder, soda and cardamom powder. Add the ghee to the dry ingredients and mix until the dough comes together. Put it in freezer for 15 mins it’s a must step! Take a small portion of the dough and shape it into a ball. Press it down slightly to flatten it and place it on the prepared baking sheet. Repeat with the remaining dough, leaving about an inch of space between each naan khatai. Brush the beaten egg over the tops of the naan khatai and sprinkle chopped almonds and pistachios over them (if using). Bake in the preheated oven for 15-20 minutes, or until the edges start to turn golden brown. Remove from the oven and allow the naan khatai to cool completely before serving.

This recipe makes about 20-25 naan khatais. Enjoy with a cup of tea for a delicious snack!
