In creating this salad dressing recipe, I wanted to enhance the flavours of the straightforward watercress salad I was preparing. I chose the creamy route, resulting in a velvety mustard dressing. Mayonnaise and mustard are a match made in heaven. Finger lickin’ good kind of stuff!

What Is Mustard?
I love good mustard and its highly diverse uses. From a good dollop in my burgers to creating sauces for marinades and salad dressings, my house never has a shortage of mustard!
On top of that, there is always a variety to suit the different meals and nasal clearing levels. I also like having different textures, from super smooth to really grainy.
Mustard is essentially mixing mustard seeds with a liquid. In most cases, they are added with acidic liquids such as vinegar to release their enzymes and oils, which gives the mustards their potency.
You control the level of heat based on which seeds you use, with yellow being the mildest and brown and black being the most pungent, and the level of acidity of the liquid.
Mustard is a fantastic ingredient for crafting flavourful vinaigrettes, exemplified by our delectable sweet mustard vinaigrette and red wine mustard vinaigrette. We also love incorporating mustard as a delightful flavour enhancer in our salads, as demonstrated by our tarragon mustard chicken pasta salad.
Dijon Mustard Vs Whole Grain Mustard
For this creamy honey mustard dressing recipe, we use whole grain mustard, also known as seeded mustard. They are sometimes referred to as “old style” or “country” mustard as well, possibly because it’s rustic in appearance.
Whole grain mustard is essentially where whole mustard seeds are visible. I love the texture and the small pops of flavour. It adds a tangy, robust, sometimes slightly spicy flavour to dressings like our honey mustard vinaigrette recipe.
Compared to Dijon mustard, whole grain mustard is more textural with a speckled appearance due to the use of whole mustard seeds in its preparation. Dijon mustard, possibly the first of all French mustards, is smooth and creamy with a uniform texture.
Dijon mustard has a sharper and tangy flavour, whilst whole grain mustard is milder and has an earthy feel. I enjoy using both kinds of mustard in dressings and sauces.
For me, it depends more on the texture and how I want to use it. Our Dijon mustard dressing shows how different the texture is compared to this creamy whole grain mustard recipe.

Whole grain mustard: We adore the grainy texture of whole grain mustard. The Grey Poupon and Mialle are very affordable, good quality brands that you can easily find.
Mayonnaise: The creamy component of this salad dressing recipe. If you’re game, you can always make some yourself!
Honey: The ultimate sweetener. Make sure you use good honey and not the overly processed honey that’s probably filled with corn starch.
Olive oil: Great for absorbing nutrients from vegetables. Always have a good quality bottle available just for salads.
Lemon: Juice a little lemon for some citrusy flavours.
Variations and Substitutions
Substitute for whole grain mustard: If you can’t find whole grain mustard, you can substitute with Dijon mustard for similar flavours. However, it won’t give you the same kind of grainy texture. Or, if you want to blow your socks off, feel free to use a hot mustard for that extra kick!
Extra creamy: Adjust the mayonnaise for a creamier dressing.
Lemon alternative: You can substitute lemon juice with apple cider vinegar, red wine vinegar or champagne vinegar.
Variations for mayonnaise: You can also opt for Greek yogurt or sour cream instead of mayonnaise. It’s important to note, though, that by choosing these alternatives, the recipe will no longer be dairy-free, as both Greek yogurt and sour cream contain dairy ingredients.
Vegan option: For a vegan mustard dressing, substitute mayonnaise with your favourite vegan mayo brand and switch honey with maple syrup.
