This recipe hits all the marks, it is a snap to whip up, can be made ahead, stores well and is healthy and delicious! This make-ahead Banana and Oat Breakfast Bake recipe is a crowd-pleaser and the best part is that everything is mixed in your blender or food processor for easy clean-up too.

Get Creative with the Toppings
Before this is baked, you get to unleash your creativity with your toppings. Mix things up with granola, mixed berries, coconut flakes, chopped-up apples or peaches, your favourite nuts or nut butter, a bit of spicy naked ginger, citrus / mixed peel, milk / dark chocolate chips - be as adventurous as you like! Not only will they add additional vitamins, minerals, and antioxidants but you can keep things fresh so every bake is something new!
There is so much good nutrition in this refined sugar-free breakfast or brunch bake that literally takes minutes to put together!
Oats
Oats are a wonderful source of beta-glucan, a type of soluble fibre that's shown to have positive effects on heart health, cholesterol levels and immunity as well as the ability to stabilise blood sugar levels.
Bananas
Bananas add so much flavour to this simple-to-make recipe and I love that they are rich in potassium and fibre as well as vitamin C and B6, to support the immune system, gut and brain health.
Eggs
I can't live without eggs! While they are a binder for this recipe, eggs are a great protein and fat source that help slow down the absorption of carbs. Also, they are packed with essential amino acids, vitamins, and minerals - go eggs!
Cinnamon
I generally can't resist adding cinnamon to my baking. Beyond its delightful flavour, it has so many great benefits, including its anti-inflammatory properties, ability to stabilise blood sugar levels and more. It is also rich in polyphenols, and powerful antioxidants to support good health.
Blueberries
Who doesn't love blueberries? Blueberries are amazing for your health thanks to their high levels of antioxidants, vitamins, and fibre, which contribute to improved brain health, heart health, and general well-being. Fresh or frozen works just fine in the recipe.
Maple Syrup
Aside from its indulgent flavour, maple syrup provides a natural sweetener option with potential antioxidant properties, and it's a source of essential minerals like manganese making it a nutritious alternative to refined sugars. This recipe uses a 50/50 mix of maple and coconut sugar, but you can you one or the other if you wish to, alternatively you can use your preferred sweetener. Though this is a healthy recipe, some coarse brown sugar sprinkled on top would make a deliciously crunchy occasional treat too.
Dark Chocolate
My favourite! Rich and indulgent, dark chocolate is packed with antioxidants, flavonoids, iron, fibre and magnesium - a magical combination that can elevate mood and support brain and heart health.
