What makes this such a great potato and leek soup recipe?
It uses simple ingredients.It’s ready in about half an hour.It’s done in just THREE STEPS!Even the fussiest kids should like it – mine does and she’s pretty darn fussy!It’s cheap and cheerful.Why isn’t it white, like other Potato and Leek Soups?
When I took the lid off my thermie to take a peek after the cooking time, I had a little giggle at the colour of the soup! I’m putting it down to the paprika, and the colour also may be affected by the veggie stock paste.
I do recommend using the ingredients I’ve listed, however if the colour is really important to you, you can leave out the paprika and swap the water and stock paste with 500ml liquid stock. I haven’t tested this, but it should be perfectly fine.
Here’s what to do… Just a few minutes of hands on time!
First up leeks, onion, garlic and butter (or oil if you’re dairy free) go into the bowl and get chopped up.
The above is sautéed for 8 minutes. During this time, you can peel and dice the potatoes – cut them into about 2cm cubes, like this:
Add the potatoes to the bowl, along with stock paste, paprika, thyme, a bay leaf, pepper and water.
Once those ingredients have been added, it’s just a case of cooking for 20 minutes, then blitzing – easy peasy! The Thermomix makes this Potato and Leek soup so easy.
For a puree soup, 20 seconds on speed 7 is all that’s needed. And if you prefer a more rustic, chunky soup you can either leave it how it is, or chop a bit – 2 seconds on speed 4 is good.
