This Thermomix recipe for potato and leek soup is sure to become your go-to potato and leek soup recipe! It’s easy, satisfying and delicious.

What makes this such a great potato and leek soup recipe?

It uses simple ingredients.It’s ready in about half an hour.It’s done in just THREE STEPS!Even the fussiest kids should like it – mine does and she’s pretty darn fussy!It’s cheap and cheerful.

Why isn’t it white, like other Potato and Leek Soups?

When I took the lid off my thermie to take a peek after the cooking time, I had a little giggle at the colour of the soup! I’m putting it down to the paprika, and the colour also may be affected by the veggie stock paste.

I do recommend using the ingredients I’ve listed, however if the colour is really important to you, you can leave out the paprika and swap the water and stock paste with 500ml liquid stock. I haven’t tested this, but it should be perfectly fine.

Here’s what to do… Just a few minutes of hands on time!

First up leeks, onion, garlic and butter (or oil if you’re dairy free) go into the bowl and get chopped up.

The above is sautéed for 8 minutes. During this time, you can peel and dice the potatoes – cut them into about 2cm cubes, like this:

Add the potatoes to the bowl, along with stock paste, paprika, thyme, a bay leaf, pepper and water.

Once those ingredients have been added, it’s just a case of cooking for 20 minutes, then blitzing – easy peasy! The Thermomix makes this Potato and Leek soup so easy.

For a puree soup, 20 seconds on speed 7 is all that’s needed. And if you prefer a more rustic, chunky soup you can either leave it how it is, or chop a bit – 2 seconds on speed 4 is good.

Thermomix Potato and Leek Soup

This easy recipe uses a simple mix of ingredients and is the perfect comforting soup for a cold day!

Ingredients

300 g leek roughly chopped100 g brown onion halved4 garlic cloves 20g40 g butter diced (or olive oil)600 g peeled potatoes diced 2cm50g Odds-and-Ends Vegetable Stock Concentrate1 tsp mild paprika0.75 tsp dried thyme1 bay leafPinch pepper500 g water

Instructions

Place leek, onion, garlic and butter in mixer bowl. Chop 5 seconds/speed 5/MC on. Scrape down bowl. Saute 8 minutes/steaming temperature/speed 1/MC off.
Add potatoes, stock paste, paprika, thyme, bay leaf, pepper and water. Cook 20 minutes/100/speed 1/MC on.
Remove bay leaf and discard. Blend 20 seconds/speed 7/MC on.

Notes

* Serve as is, or topped with grated Parmesan, pepper, chopped fresh herbs, and sliced spring onion.
* If you prefer a chunkier texture, you can either leave as is, or blitz a little – 2 seconds/speed 4/MC on instead of blending at Step 3 is good!
