I wouldn't describe myself as a strong baker. It isn't something I do often and there's an exactness to it that stresses me out slightly.
It’s been an eventful week in Perth, Western Australia. From a Covid lockdown (after no locally transmitted cases in 10 months), to devastating bushfires to a once in a decade flood in the Gascoyne. It was a lot and it was a weekend for staying home, staying safe and as it turns out at my house, it was a weekend to give baking a whirl. It was Cheesymite Scroll time.
I wouldn’t describe myself as a strong baker. It isn’t something I do often and there’s an exactness to it that stresses me out slightly. But I’ve had it in my head that I wanted to try to make scrolls for a while so the time was cherry ripe to pursue this 2021 goal. I did a quick google and for the best Cheesymite Scrolls and came across this recipe on Bake Play Smile. I liked that it had a Thermomix version and a non Thermomix version. Now it was Sunday and I wanted to make this as early for myself as I could, so Thermomix version it was.
Thankfully I had all the ingredients I needed, so got straight to it. It was a good recipe, really easy to follow. I think for me it was more the shape of the dough when I rolled it out that I should have been more conscious of. More like a rectangle I suppose, so that when you roll it up, it makes for more even scrolls all the way along. Mine ended up more like a wonky oval, so when I rolled it up, the end bits were a little small and didn’t have even filling. But hey you learn these things and giving something a go is the best way to do that.
So here they are before the oven, as you can see, a little bit of a size difference between them, but again, that’s ok, but something to try and refine when I go for round two.
And ta dah! After 20 minutes in the oven they were ready. They puff up and fill out the tin so beautifully!
If you were going to eat them straight away or sharing them as part of morning tea, then brushing them with a little butter would probably give them a nice shine and well let’s be real, butter is amazing and the more the merrier.
So if you have a rainy day Sunday of your own or just fancy combining the magic of cheese and Vegemite into a scroll, then this recipe is a good one when you have your baking L plates on.
