I’ve talked about this before, that now my kids are older (teens and young adults), I’m focusing on more meals where people can make their own dinner with options how they like.
This super easy chicken meal is along the same lines. It’s essentially shredded chicken that I cook in the slow cooker, and it can be used for a variety of meal options: rice bowl, wraps, tacos, jacket potato, sliders etc. It’s only 3 ingredients and two of them are pantry ingredients.
Ingredients
Chicken breast (The amount doesn’t need to be exact, I always just buy a bigger packet because I have a lot of mouths to feed, so I usually just over a kilo) 1 x packet taco mix 1 bottle of salsa (I used a slightly larger bottle, 375 grams, this time because I was making a fair amount, but just a regular 300 gram bottle is fine too)Instructions
It’s jut a matter of putting the chicken in the slow cooker, adding the salsa and seasoning mix, stirring it all around, and cooking until the chicken is cooked through. The amount of time depends on how thick the chicken is. I put in on slow for about 4 hours, and then used two forks to shred it up. Easy as!
For this particular dinner, I served in a bowl with the following ingredients:
CucumberTomatoFetta cheeseSpanish onionCharred cornRiceBut the chicken would work well with pitta bread, wraps, jacket potato, wraps, sliders, and a heap of different easy meal ideas.
