If you’ve travelled through Hong Kong recently, you might have stumbled across a new bar situated atop of the Sky Bridge connecting HKIA’s satellite terminal. Dubbed ‘Intervals’ It’s Plaza Premium Group’s new bar offering, is set to offer “a remarkable culinary journey,” states the press release. “Passengers passing through Hong Kong can now indulge in the extraordinary offerings of Intervals—a first-of-its-kind concept that brings together the finest cocktails in a captivating setting.” One thing is for sure, Intervals offers the most spectacular views of the entire air field.
Intervals, designed by Australian architect Mitchel Squires, has taken three years to
conceptualise. The name ‘Intervals’ is inspired by the idea that the time of day becomes fluid
while travelling, and that key actions are measured in intervals of time. Whether it’s how long
it takes to clear security, the transit time, the time it takes to get to the gate, or the time
between boarding time and final call.
Made up of a series of miniature drinks, known appropriately as a ‘flight of cocktails’,
Intervals’ drinks programme has been tailored to how much time a guest has to spare ranging
from a 15 minute to a 45 minute experience. Intervals also offers food experiences designed
to be an elevated and global take on “pinchos”.
Mei Mei Song, Director of Global Brands at Plaza Premium Group discussed the location with TheDesignAir. “I believe the airport should be a part of the journey that we all look forward to! Intervals was designed to be a unique, standalone airport bar concept where you can enjoy cocktails against an incredible, panoramic view of the HKIA air field.”
“Our concept highlights the fluid concept of time, there are drink concepts, and even the space is thoughtfully divided into different zones. Each zone has been designed to optimise sight lines, including the bar, booths, and dining area, ensuring every corner within Intervals benefits from the breathtaking airport views. It’s all in the details from the materials, to the furniture, and colour tones, all enhancing the views to create an enchanting ambiance.”
Intervals also references the growing trend in aviation to embrace local roots. Song continues, “Intervals, as a brand under Plaza Premium Group, shares the ethos of embracing a “sense of place.” We deeply understand the significance of a sense of place in travel experiences and that a truly immersive journey involves more than just visiting a destination—it’s about connecting with the local culture and creating memorable experiences that reflect the essence of a city.”
“To blend Hong Kong’s culture in the Intervals journey, we partnered with hometown Hong Kong brands such as Plantation Tea, Loveramics, and Young Master Brewery. Even the glasses we serve our drinks, the chocolate and candles we sell in our retail space are also intentionally sourced from these remarkable local brands.”
