Cold Springs Inn and Brewing Co

Sometimes we just need to hang out in a good bar with friends- someplace that’s relaxing, has a little atmosphere and good service.

We’ve been watching the construction on the Cold Springs Inn and Brewing Company over the past two years and now it’s open! Everyone in the area knew it as a “biker” bar in the past, but you won’t believe the transformation. It’s now one of the best brewpubs in the area.

Scenic View of the Yellow Breeches

Chris Crowley and Dennis Mulroy completely reconstructed this bar with their own hands, transforming it into a destination complete with two beautiful decks overlooking the scenic Yellow Breeches stream. It’s not unusual to see fly fishermen and women wetting a line in the trout-filled stream as you nosh. Even our server pointed out the yellow Palomino trout inhabiting the water beneath us. It’s wily. Hasn’t been caught yet.

You might see kayakers paddling by in the warmer weather. Chris and Dennis cater to them by providing a mooring area so they can stop for a bite to eat. A changing room, lockers and a dryer are also provided. Makes you want to paddle down the Breeches, doesn’t it?

Bigger Than It Looks

From the outside, the pub looks small, but it’s surprisingly spacious inside. The bar is adorable, built with freshly laid stone and wood features, under shelf blue and red lighting for atmosphere, and padded bar seats for those looking to stay awhile. Walls are freshly varnished pine with tables created from attractive wood planks adding to the down-home look. Large TVs dot the walls. I can see spending a nice, comfy afternoon here when it’s cold-watching a game on TV and enjoying great conversation. Oh, yeah.

But, for now, it was beautiful outside and we were drawn to the deck. We had a group of twelve, so I called to give them a heads up and everything was set up on the deck when we arrived. Just to let you know, they don’t take reservations, but they will accommodate larger groups. Just make sure you get there early. By six o’clock- forget it. They’re full.

Brewing On Premise

From the window on the street, you can view the stainless steel brewing vats where Steve Knott and Kristen Richards ply their trade. I decided to try a flight of brews to familiarize myself with their heady selection. Two of the more popular brews were not available at the time, including CSI Mr. Crowley’s Cream Ale.

The CSI Brown Trout Stout was a winner. Dark and rich, it truly did have a “smooth, velvety finish”. Certainly, the brews will change with the seasons. One of their bad boys on tap right now is the wheat-based ale gently infused with fresh-smoked Habaneros called CSI Endorphin Enhancer. I wasn’t game enough to try it, but I’m sure some of you will reach for it in a hot second!

Wines, Liquors and Hard Ciders Available, Too

Pinnacle Ridge Winery supplies the wine. I didn’t try the wine on this occasion, but I’ve tried the Pinnacle Ridge Riesling in the past and enjoyed it. I’ll try their wine choices in the future.

Featured liquors include regular and flavored vodkas from Dead Lightning Distillery.  Vodka, gin, rum, bourbon and rye from Midstate Distillery. Tattered Flag Brewery and Stillworks supplies reposado tequila. Other featured liquors come from Hidden Still Spirits offering premium whiskey and bourbon and Moonshine Craft Cocktails, like autumn apple w/cinnamon whiskey and French vanilla creamer, hailing from Bald Hills Distillery.

Will Add To Menu In Time

The menu right now calls for typical salads and finger foods. Two that caught my eye are the Bacon Bombs with pepper jack cheese wrapped in bacon and Philly Cheese Steak Rolls with marinara sauce.

Sandwiches include burgers, lightly smoked pit beef, pulled pork, crab cake and grilled chicken and, of course, boneless wings in a variety of sauces. From what I understand, they’ll be adding to the menu as time goes by.Cold Springs Brewery Chicken Wings

Kick back and get to know your local brewpub. Grab those deck seats while the weather is  warm and enjoy a relaxing, casual afternoon or evening in one of the most attractive settings around. Hold on to your hats. I can see this pub getting better and better as time goes on. Cheers!
