Ingredients
For the cake
3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon baking soda
1/8 teaspoon salt
1/4 cup white granulated sugar
1/4 cup plus 2 tablespoons milk
1 teaspoon vanilla extract
1/3 cup plus 1 tablespoon vegetable oil
1 large egg, room temperature
For the apples
2 medium/big apples, peeled, cored and sliced.
3 tablespoons white granulated sugar
1/2 teaspoon cinnamon
For the crumb topping
1/3 cup light brown sugar
1/3 cup white granulated sugar
1 teaspoon cinnamon
1/2 teaspoon salt
10 tablespoons unsalted butter, melted and cooled
1 and 1/2 cup all purpose flour
Directions
For the crumb topping
1.- In a bowl mix: sugars, cinnamon, salt and flour. Add melted butter and mix with a fork until mixture creates a crumb. Set aside in the fridge until ready to use.
For the apples
In a bowl, mix together apple slices, sugar and cinnamon. Set aside until ready to use.
For the cake
Grease and flour an 8 inch round springform pan. Set aside. Preheat oven to 375 F.
1.-In a medium bowl, whisk together flour, sugar, baking powder, cinnamon, baking soda, salt and nutmeg. Set aside.
2.- In a small bowl, mix milk, vanilla, oil and egg.
3.- Add wet ingredients into dry ingredients and mix. Do not over mix. A few lumps are ok.
4.- Pour batter into the prepared pan. Add the apples mixture on the top of the batter and finally you sprinkle the crumb topping over the apples covering completely.
5.- Bake cake for about 60 minutes or until the topping is golden brown. Be sure the cake part is all cooked so please insert a knife or a toothpick in the center of the cake and see if the cake batter is cooked. If the crumb is getting dark but the cake part needs more baking time, grab a piece of foil, cover the top and keep baking.
6.- Let it cool and enjoy!!
If you want you can drizzle some caramel on top, serve it with ice cream or whipped cream. I eat mine just how it is with a big cup of coffee.
