Funfetti anything just brings me so much joy. The colorful sprinkles, the simple cookie, the unbeatable taste… I’ve never met a person that doesn’t like Funfetti.
In case you don’t have a box of Funfetti mix handy, you can always whip up a batch of your own Funfetii cookies. These are really just sugar cookies with sprinkles.
This dough is so beautiful. Just look at it. I need to invest in some fun sprinkles. I don’t have any right now in my pantry except for the jimmies you find at the grocery stores.
These cookies are just slightly crispy on the edges and have a chewy center.
My little tester couldn’t wait to snatch one up after I took this photo.

Ingredients
2 and ? cups AP flour ½ teaspoon baking soda ½ teaspoon salt 1 cup unsalted butter, softened ? cup granulated sugar ¾ cup powdered sugar 1 large egg 1 teaspoon vanilla extract 1/2 cup sprinklesInstructions
Preheat oven to 350F. Cream together the butter, granulated sugar, and powdered sugar. Beat in egg and vanilla extract just until combined. Add the flour, baking soda, and salt until combined. Stir in sprinkles. Do not overmix. Shape dough into balls and place on the cookie sheets about 2 inches apart.
