Crockpot Buffalo Chicken Chili

Ingredients: 1 medium yellow onion, chopped 1/2 cup hot sauce 2 lbs. boneless, skinless chicken thighs 1 Tablespoon smoked paprika 1 Tablespoon garlic powder 1 can fire roasted tomatoes, diced 1 teaspoon chipotle chili powder 1 jalapeño pepper, chopped 2 poblano peppers, chopped 3/4 cup celery, chopped 4 Tablespoons butter, salted 3 cups chicken broth 1/2 cup plain Greek yogurt 1/2 cup fresh cilantro, chopped Salt and pepper to taste For topping, avocado, shredded cheese, sour cream, etc. Instructions: In the bowl of your crockpot, combine the chicken, onion, hot sauce, paprika, garlic powder, chipotle chili powder, diced tomatoes, poblano peppers, jalapeños and celery. Stir in 2 cups of the chicken broth. Add the butter slices. Season with salt and pepper. Cover and cook on low for 5-6 hours or high for 3-4 hours. Shred the chicken using two forks.
