This recipe comes from my former co-worker, and was demonstrated at Cancer Survivors Day 2026! It’s so easy and tastes great! It’s hard to beat that combination! At Survivors Day it was served over quinoa but it’s also great on lettuce!

Ingredients

Units
  • 1 can (15.5 oz.) black-eyed peas, rinsed and drained
  • 3/4 cup chopped sweet red pepper
  • 3/4 cup chopped green pepper
  • 3 green onions, chopped OR 1 medium onion, chopped
  • 1/4 cup minced fresh parsley (optional)
  • 1 garlic clove, minced
  • Homemade vinaigrette to taste
  • black pepper

Instructions

In a bowl, combine all ingredients. Cover and refrigerate for up to 24 hours.
